Eh, the amputations didn’t bother me as a kid.
Mind you, I was a teenager when the prequels came out, and I find them a lot more uneven. Much more gruesome than the OT towards the end (no one was immolated in the OT, at least), but much more child-oriented at the beginning. But it’s the younger generation that’s been “re-evalutating” those films, so clearly they were watching and enjoying them as they came out. Not really sure what the take away there is - maybe kids just like a little blood n’ guts sometimes.
